Blackdevil Angler by Robert J. Lang. From his book Origami Sea Life (co-authored by John Montroll).
This is seriously one of my favourite models - both to fold and to present. It's up there with Kamiya's Bahamut - except this can actually be reasonably done from a 10" square, which I have much readier access to than florist's foil.
